Hello All,
At long last I am attempting to fix my 1987 P 125 X Postino. She bogs down at higher rpms, and so will be cleaning out the carburetor as my first troubleshooting step. Would anyone be able to point me in the direction of a carb kit? As I have little to no mechanical knowledge (my friend who is helping me does, but not with Vespas), any advice would be great appreciated.

Carb Kit?

There's not much in a carb kit. You can get them from:
SIP-Scooter and Scooter-Center in Germany, Scooter Works and Vespa Motorsports in the US.
I would take it apart first just in case you need other parts as well. Plug the inlet with a rag as it is very easy to drop things into the engine.
Another source of high rpm issues is a too long fuel line from the tank to the carb. Keep it as short as reasonably possible. Do not fit an external fuel filter.
